Description
The Head Chef will lead kitchen operations, manage and mentor staff, and create innovative menus. This role requires strong and varied culinary experience, leadership abilities and a passion for creative food excellence. The ideal candidate will ensure consistent high-quality dining experiences for guests.
Responsibilities
- Menu and recipe development: Create innovative and seasonal menus and recipes that reflect the restaurant's culinary direction, incorporating African dishes, and a variety of international and healthy dishes.
- Kitchen management: Oversee the kitchen operations, including kitchen stock management, ordering ingredients and supplies and ensuring kitchen cleanliness and compliance with local and international health and safety regulations.
- Team leadership: Train and manage kitchen assistants, cooks and other kitchen staff, ensuring a positive and professional environment where creativity and excellence are brand values.
- Budget and cost management: Monitor kitchen expenses, including food, labor and other miscellaneous kitchen costs, making adjustments as necessary to achieve the target margins without compromising quality of food and service.
- Quality control: Ensure all dishes are prepared to the highest standard and in a timely manner, conducting regular taste tests and making recipe adjustments as necessary, in line with company policy.
- Customer satisfaction: Work closely with the restaurant manager and front of house service staff to ensure a consistently enjoyable and seamless dining experience for guests, responding to feedback and making adjustments to meet customer expectations.
Qualifications
- Culinary degree/certificate or equivalent relevant experience, with a minimum of 5 years’ experience in a similar role or for QBE, 8 years as head of kitchen at a renowned hotel or restaurant
- Strong foundation in African cuisine and familiarity with international and healthy dishes. Experience with various methods of cooking is preferred.
- Proven leadership experience, with the ability to manage and motivate a team.
- Excellent organizational and time-management skills.
- Creative thinker with a passion for food and innovation.
- Sound knowledge of food safety, sanitation, and health regulations (locally and internationally).
- Effective communicator, capable of managing relationships with suppliers, staff, and guests.
